I.
Sesame Ginger
(ingredients)
Mixed greens, avocado, cilantro, furikake, sesame ginger dressing
(notes)
It’s good to have a variety of simple salad recipes that are approachable yet flavorful for meal pairing or as a pre-dinner snack.
As a general rule, I gently massage the dressing into the greens before adding in everything else.
Optional plug-ins include green onions, cucumber, or radish. Pairs especially well with fish, steak, or chicken.
For the dressing, you could make a homemade one or find a similar one in most grocery stores— this is my favorite.
The furikake seasoning provides nice flavor, texture, and nutrient boost.
II.
Lemon-anchovy
(ingredients)
Mixed greens, microgreens, avocado, breadcrumbs, pecorino, lemon-anchovy vinaigrette
(notes)
This is my universal pairing salad. Sometimes I do a very scaled back version with just the greens, dressing, and pecorino.
Optional plug-ins include chives, olives, capers, or sunflower seeds. Pairs well an omelette, salmon, shrimp, chicken, steak, or pasta.
The anchovy should add flavor, salt, and complexity rather than be overbearing. While you can sometimes find a dressing like this in the grocery store, it’s best made at home for a lighter take on Caesar.
