Greek Pita

Pita bread, baba ghanoush, tofu, lettuce, cucumber, herb yogurt, olive oil.

Very quick assembly for lunch or a snack. A half or whole both make a suitable portion depending on appetite.
Using tofu is a good way to diversify protein. It’s also easy on digestion and rich in phytoestrogens which support hormone balance. For this recipe I used firm tofu and crisped it up in the cast iron with butter and salt. That said, you could also sub for chicken.
After heating the tofu I gently warm the pita in the pan, but you could use a toaster if the tofu is already made. Then I line the inside with baba ghanoush spread which offers it a generous amount of flavor. Could sub for hummus instead.
The yogurt herb dip is something you can easily make at home with what you have on hand (yogurt, lemon, herbs) or use a store bought tzatziki.
Drizzle with olive oil and seal salt.
